Joe Seiichiro Mitsushima – Chef de Cuisine

Joe was born in Japan. He started showing interests in cooking when he was 8 years old, like many chefs his inspiration was his mother. When she would cook for the family, Joe was always by her side assisting, but more importantly learning the Japanese/Chinese cooking techniques.

When he was in university, he would cook for himself everyday, he cooked for his friends for any occasion, birthdays were a good excuse to get behind the stove. Not professionally at this time in his life, but cooking was always one of his top interests.

He could wait no longer so he started working at a restaurant in a hotel near his university. This is where he learned basic professional cooking.

After moving to Whistler, Canada, He worked at Japanese restaurant as a chef de partie. A few years later, he showed more interests in Western cuisine, he was then hired at an Italian restaurant in town.

Joe met Chef Eric Vernice at “Jayde” restaurant where he was inspired by the passion of a true Chef. Working a few weekends until it closed, Joe always knew once he got the chance to work with Eric again he would take the opportunity. It took almost three years for this to happen, but Joe waited patiently for his time to come.

Now under the guidance of Eric Joe is in charge of the kitchen and enjoying every minute of it.
